We adopted Luee from the Humane Society in 1996. He was 2 years old, but still a pup. He has slowed down a bit; his age is catching up to him. He is the best dog anyone could ever have. Luee had to be put to sleep on April 15, 2009. Rest in Peace Pup.

DUCK! MAKE MINE ROASTED CHICKEN


Back to Work Day Speakies:

Those 3 day weekends can be a killer and coming back to work is no fun after having one. The work load seems to be heavier and the mind is slower than usual. There were some great football games this weekend, glad to see the Jets win, all the favorites are getting knocked off early in these playoffs. I loved watching that Seahawks and Bears game with that snow coming down, that’s football at its finest.

Not much happening on the holidays today, but I discovered it is “NATIONAL PEKING DUCK DAY.” I had Peking duck many years ago and really enjoyed the crispy skin and the overall taste of the meat. It was prepared by a friend of mine who was in the Air Force Reserves stationed at McGuire AFB. He was a world traveler and a pretty good cook to boot. On one of the cruises Roe and I took one evening duck was on the menu, bad move on my part. I’m thinking if it tastes like the Peking duck I had why not give it a try, sorry I did, it was greasy tasting and had a very fatty texture, haven’t had duck since. There’s a Sam’s Club near our house and we love their roasted whole chicken we get about 2 meals from it and even homemade chicken soup now there is a feast for $4.99 a bird. While we are on the subject I am also a fan of Cornish game hens, when I eat those hens it’s like being Robin Hood eating at a Sherwood Forest banquet just rip off those legs and dive in. Well almost lunch time and I’m going to enjoy the rest of a great beef stew made by my daughter-in-law Elizabeth.
